A diet that contains a lot of fats or sugar damages the health, because it creates acid in the body. For balance, the body extracts alkaline minerals from the bones, which leads to their weakening. The most controversial in the case of fats is cholesterol, which helps lubricate the arterial walls, preventing their erosion.
Cholesterol is of two types, depending on the protein to which it is bound (lipoprotein, the agent that transports it into the circulatory system):
-the bad one (LDL) - low density lipoprotein
-the good one (HDL) - high density lipoprotein
LDL is responsible for arterial deposits. Things that increase LDL : animal fats and an increased amount of calories (sweets, flours), smoking, caffeine, medicines, refined sugar, food additives, stress, pollutants. Cold pressed vegetable oils, fish oil, whole grains, vegetables, vitamins PP, C, E, F reduce LDL. HDL (composed mainly of lecithin) destroys fat deposits on blood vessels and ensures the transport of 20% of blood cholesterol. Raw egg contains HDL.
Excessive consumption of fats and oil results in the body creating a fat reserve. The value of fat for metabolism depends on the content of unsaturated fatty acids. They are sensitive to heat and light.
Vegetable oil is cholesterol free and contains unsaturated fatty acids, stimulates lipid metabolism and activates the liver, lowers cholesterol, is easily digested. Healthy vegetable oil is the one prepared by cold pressing, from unheated seeds (olive oil, sunflower, flaxseed, almond, etc). Cold pressed oil is stored in dark colored containers. As a recommendation 30g/day of cold pressed oil is sufficient. It is recommended a variety of oils to ensure a healthy ratio of omega 3, 6 and 9. Unsaturated fatty acids from seeds, soy, nuts, almonds, grape seeds, cereal germs, fish fat have a greater ability to react with other substances and to be metabolized.
Animal fats contain saturated fatty acids(palmitic acid, stearic acid) and cholesterol. They are difficult to digest, it damages the liver and the bile, it increases the cholesterol in the blood, it favors the deposits of Ca and fat on the vessels(they lead to infarction). Caution is associated with fats with starch,sugar,protein, acids,salt,depending on vital energy. It is highly recommended to combine fats with green vegetables. The composition of fats is altered when heated in the presence of flours(donuts, fries, etc). This cholesterol is altered and causes arteriosclerosis(hardening or narrowing of the arteries that lose elasticity), arteritis(fatty deposits on the arterial walls, which can even block blood circulation), coronary thrombosis (clot formation in arteries that block blood flow to the heart) and aneurysm (tumor caused by dilation of the arteries). In this case, the cholesterol is higher than normal.
